Had a delicious Christmas pudding from Michele and The Art of Pudding. As a Brit, I know a good Christmas pud is pretty hard to make – most end up, dry or flavourless or relatively tame. The Art of Pudding’s King George product is none of these (and super easy to prepare). They recommended soaking it for some time (hours? days? weeks?) in your favourite alcohol before heating. I used inexpensive brandy and it was delicious. It’s probably not necessary as the pud is already moist and flavourful to begin with. Marinating certainly adds to the drama and authenticity and it lets you lay claim to some personal involvement. Looking forward to more traditional British steam puddings – bring on the Jam Roly-Poly, Spotted Dick, Sticky Toffee, Treacle, etc.
